Every ingredient we weigh, and what one cup of it holds

The same cup holds 86 grams of cocoa powder and 339 of honey, which is why a converter that stores one number per cup is answering a different question from the one you asked. Each of these 20 pages carries the cup, the spoon and the foreign cups someone put on a scale, with the name of that authority beside every figure.

On 11 of the 20 the authorities disagree, and those pages print both numbers and say which one we publish and why. 16 carry a Japanese 200 ml cup and 14 a metric 250 ml cup, taken from the tables that weighed them rather than scaled from the American one. Where nobody measured a pairing, the row is empty and says so. Cooking from a recipe abroad?
