Almond flour in grams, and why one gram apart proves nothing

Blanched almond flour weighs 96 grams to the US cup. The USDA reads 95 for a cup of ground almonds, 1 gram away, which looks like two authorities confirming each other. They are not. They weighed different things and happened to land in the same place.

The closest cup agreement on this site, and the least meaningful

One gram apart is the tightest any two authorities come on a cup anywhere in our data. On flour they differ by 5, on milk by 17. A reader would be forgiven for treating 96 and 95 as settled. Read the labels instead of the numbers. King Arthur weighs almond flour: blanched almonds, skins off, ground fine, the product a macaron recipe means. The USDA entry is "nuts, almonds, 1 cup, ground", which is whole almonds with their skins put through a grinder. Those are different ingredients that look alike in a bowl, and their weights converging says nothing about either being right.

We publish King Arthur's 96 g, because it is the only authority weighing the actual product. The yogurt master carries the same lesson by a different route: there two Japanese tables agree because one reprinted the other. Here two American tables agree because they are measuring different things. Either way, agreement is a claim to be audited rather than a conclusion, which is the habit the methodology page sets out.

Meal, flour and whole nuts are three prices of the same almond

Australian charts call this ingredient almond meal, and Women's Weekly and Sanitarium both weigh it at 120 g per 250 millilitre cup. Those same charts put whole almonds at 140 to 160 g in that cup. Grinding your own is a fine idea and it does not start where the chart starts: you are measuring nuts before the grinder and flour after it, and a cup means something different on each side of that step. Weigh the almonds, grind them, and use the weight rather than refilling the cup.

A rare clean agreement abroad

Women's Weekly and Sanitarium print the same 120 g for the metric cup, which is worth pointing out because those two are 25 grams apart on wheat flour. Kyoritsu weighs a 200 millilitre Japanese cup of アーモンドプードル at 80 g, and Benricho has no almond row at all, so the Japanese figure rests on a single table.

How many grams is a cup of almond flour?
96 g, from King Arthur, for blanched almond flour. Its chart prints the same 96 for toasted almond flour, so the toasting does not move the weight.
Can I use almond meal instead of almond flour?
For a rustic cookie or a crust, yes. For macarons or anything pale, no: meal is ground with the skins on, so it is coarser and darker, and it behaves differently in a batter that depends on a fine crumb.
Is ground almonds the same as almond flour?
Not quite, and the difference is bigger than the gram figures suggest. Our Australian charts weigh almond meal at 120 g per 250 ml cup and whole almonds at 140 to 160 in the same cup, so grinding your own from whole nuts starts from a different place.
