Yeast, packets and cubes, and where the 42 grams came from
A European cube of fresh yeast weighs 42 grams and stands in for 14 grams of the instant dry yeast sold in packets, which is 2 packets of 7 g. The odd number is not a dose anyone designed. It is what you get when you cut a baker's block twelve ways.
The equivalences, and the one that needs a caveat

The fresh-to-dry figure of 3 to 1 is Dr. Oetker's own: one cube equals two packets. It applies to the instant dry yeast Europe sells in those packets, the kind you stir straight into flour. American tins often hold active dry yeast instead, which carries more water and is conventionally replaced at about two to one rather than three. Printing a single ratio without naming the product would send half the readers to half the yeast they need, so we name it.
The cube is a division, not a decision
Uniferm, one of the German yeast makers, explains the number plainly: bakers bought 500 gram blocks and split them into twelve, which gives 41.7 g. Round that and you have the 42 gram cube in every European chiller. It survives because the trade cut it that way, not because 42 grams raises any particular quantity of dough. Knowing that makes the next question worth asking plainly: how much flour does one cube raise?
How much flour a cube raises, where the sources disagree
Dr. Oetker doses one cube for a dough of at most 1 kg of flour. Uniferm says one cube is sufficient for 500 to 1000 g. Those overlap at the top and diverge at the bottom, and the divergence matters: at 500 g of flour, Uniferm's reading uses a whole cube where Oetker's uses half. That is double the yeast, which proves in a rush and carries a yeasty taste into the crumb. We publish the conservative reading, 21 g of fresh yeast per 500 g of flour, and show both sources rather than average them, on the principle the methodology page sets out.
This also corrects our own earlier note. Our research digest carried the cube as dosed for 500 g of flour, which would have made it six times stronger than the dry packet it is supposed to replace. Checking the manufacturer's wording resolved it: the cube is dosed for up to 1 kg, so at 500 g of flour it is 21 g fresh against 7 g dry, and the ratio comes out at 3 to 1 against the instant packet, as it should.
Leaveners are dosed with tolerance, and the brands admit it
Flour weights argue over grams. Leaveners do not, and the packaging language shows why: German packets say ausreichend fuer, sufficient for, never exactly. A packet is sized so that any dough up to that flour weight will rise, with margin built in, which is why nobody prints a tolerance. Dr. Oetker states both halves on its own site: a packet holds 16 g, and one is enough for etwa 500 g of flour. The weight is printed as a flat number, the dose carries that etwa, and the etwa is where the margin hides.
The French sachet has the same character with less candour. Eleven grams is the figure retailers print for Vahine and Alsa sachets, and it is no national constant: a French chef surveying brands found sachets from 7 to 11 g, and Alsa itself publishes no weight on its own site, so the number reaches you through the shelf rather than the maker. English pages quote 11 g as though it were a standard. Read your own packet where you can, and treat the figure here as the common case.
One arithmetic check that does corroborate
Two published numbers agreeing through a rule is rarer than it looks. Here it happens: the cube is 42 g, the instant-packet ratio is 3 to 1, and 42 divided by 3 is 14, which is exactly 2 of the 7 gram packets Dr. Oetker also sells and also equates to one cube. The packet size and the cube size were set by different pressures, retail portioning and a baker's block, and they land in step. Our salt master counts only two ingredients where King Arthur and the USDA land on the same number independently, which is the measure of how uncommon this is.
Questions about yeast quantities
- How much dry yeast replaces a 42 g cube?
- 14 g of the European instant-type packet, which is 2 packets of 7 g. Dr. Oetker publishes that equivalence itself. If your tin says active dry rather than instant, use more: active dry is a wetter product and the widely used ratio there is about two to one, not three.
- How much flour does one cube raise?
- Up to 1 kg by Dr. Oetker, 500 g to 1 kg by Uniferm. The safe reading is half a cube, 21 g, per 500 g of flour, because the lower bound doubles the yeast and over-yeasted dough tastes of it.
- Why is the cube 42 grams and not 40 or 50?
- Because nobody chose it as a dose. Uniferm explains that bakers bought 500 g blocks and divided them twelve ways, which is 41.7 g. The retail cube inherited a number that came out of a division.
