Egg sizes, and why the same word buys a different egg
A European recipe asking for a large egg wants roughly 63 grams or more. An American carton marked Large averages about 56.7. The word matches and the egg does not, and it is one rung out rather than a rounding: Europe writes its bands as grams per egg, America writes ounces per dozen, and Large sits in a different place on each ladder.
Two systems, two units
European Commission Regulation 2023/2465 sets weight bands in grams for a single egg in its shell. AMS 56, the American standard, sets a minimum net weight for a whole dozen, in ounces. Both of them do constrain the single egg, which is worth saying plainly because the internet mostly says otherwise: Table I carries a third column headed minimum net weight for individual eggs at rate per dozen, running from 29 ounces down to 17, one class below the carton figure beside it, and section 56.218 adds a lot tolerance of 3.3 percent on top.
So the difference is not that Europe protects the egg and America protects the box. It is the unit and the arithmetic. All 4 European bands print grams you can read off the carton. None of the 6 American classes prints a gram figure at all, and the American floor for one egg arrives in ounces at a rate per dozen, so you divide by twelve before it means anything: a single Large egg has to make 23 ounces at that rate, which is 54.3 g, while the dozen it sits in has to average 24, or 56.7 g each. Two floors, both real, and neither one printed in the unit a European recipe is written in.

What America publishes, and what we derived
The two ounce columns are the published figures, straight from Table I. Both gram columns are arithmetic, ours rather than the USDA's, and worth labelling as such because every chart on the internet prints 56.7 g as though someone weighed it. Peewee is the one class with no individual floor: the standard prints a dash there, and so do we.

Refusing to scale a published figure is the rule this site runs on, and here we break it deliberately, because without the division the two systems cannot be compared at all. The honest form is to do the arithmetic in the open and mark the column derived, which is the same treatment our peanut butter master gives the tablespoon nobody measured.
The swap that costs you an egg
Line the two up and the mismatch is one rung, not zero. US Large lands inside the EU Medium band. EU Large lines up with US Extra Large. So a German or French recipe calling for a large egg, cooked with American Large eggs, runs about 6 grams short per egg at the bottom of the band and further at the top. One egg short of liquid, fat and structure at once is survivable in a tray bake. Across the four eggs of a sponge it is most of an egg missing, and the batter tells you.

In the shell or out of it
Both regulations grade eggs in their shells, and the shell is roughly a tenth of the weight. A recipe that asks for grams of egg rather than a number of eggs almost always means the shelled contents, so the figures circulating for a US Large, about 56.7 in shell and around 50 out of it, are both correct and describe different things. Charts that print them side by side without saying which is which leave the reader about a tenth adrift, which is the same size as the grading gap they came to resolve.
Which regulation, and why the number matters
The European bands come from Regulation 2023/2465, which replaced 589/2008 in 2023 without moving any of them. That detail earns its place because the older number is what most English pages cite when they cite anything, and our own research digest pointed at a primary source that had gone dead. The bands did not change, so nobody was misled about the grams; the citation was pointing at a document that no longer governs. Questions about egg sizes
- Is a European large egg the same as a US large egg?
- No, and this is the swap that catches people. EU L starts at 63 g while US Large averages 56.7. A European recipe saying large wants what an American carton calls extra large, about 63.8 g.
- How many grams is one egg?
- In the shell, about 56.7 g for a US Large and 53 to 63 g for an EU Medium. Out of the shell it is roughly a tenth less, and a recipe asking for grams of egg almost always means shelled, so check which one a figure refers to before you trust it.
- Does USDA publish a gram weight per egg?
- No, and it does publish a per-egg minimum, just never in grams. Table I sets 24 ounces a dozen for Large and a floor of 23 ounces at that rate for the single egg, so every gram figure in circulation, ours included, is somebody's division by twelve. The EU writes its bands in grams per egg to begin with.
