The lightest powder, and the spread it makes

A US cup of cocoa is 86 g by the USDA, lighter than flour or sugar by a wide margin, so 100 g is 1.2 cups, comfortably over one. Search the same question and you meet anything from 0.83 to 1.2, because the calculators cannot agree on the cup. The 0.83 end assumes a cup near 120 g, a flour weight; cocoa does not weigh that. Take the light figure, or better, weigh it, since cocoa compacts under a spoon more than almost anything in the kitchen.

Natural or Dutch, one number

Cocoa comes two ways, natural and Dutch-process, and you might expect them to weigh differently. Neither King Arthur nor the USDA publishes a separate figure, so a site handing you a distinct Dutch number made it up. We use the USDA's single 86 g and say plainly the split is unmeasured. A round weight rarely lands on a round cup. 200 grams of flour is an untidy 1.7, and 200 grams of butter stops just short of one at 0.88. Double the cocoa itself and 200 grams outgrows even oats.
